Bolivian Easter Rice Pudding Recipe

Serves 8 people

Ingredients:
1 cup of rice (250 g.)
2 cups of water
1 liter of milk
1 can of evaporated milk (250 ml.)
1 can of condensed milk (250 ml.)
1 lemon peel
Pinch of salt
1 egg
1 cinnamon stick and ground cinnamon
Directions:
  1. In a pot, place the two cups of water, rice, lemon peel and a pinch of salt.
  2. Heat to a high temperature until it breaks into a boil, then turn it down to a low temperature, for about 10 minutes, until the rice is cooked.
  3. Add evaporated and condensed milk, boil for an additional 3 minutes.
  4. Add the liter of milk and let it boil. Remove from the heat.
  5. Lightly beat the egg yolk, mixing it into the rice and mix vigorously, until the yolk is completely blended.
  6. Serve the rice (hot or cold) in glasses and sprinkle with ground cinnamon.
